While we do have a super junky yet delicious recipe we use for an occasional dessert, we have developed a healthier (or less bad for you) version of the recipe that we like to make during the week or for Shabbat breakfast.

These oatmeal cookies are very similar to our regular chocolate chip cookie recipe and still satisfy your cookie craving, but also have more fiber, protein, whole grains, and less sugar.

You’ll need the following ingredients.

  • 1 egg
  • A bit under half a cup of oil
  • 1/2 cup of ground walnuts
  • 1/3 cup of oats
  • 1/2 tsp of baking soda
  • 1/2 tsp of baking powder
  • Under 1/2 cup of brown sugar
  • About 3/4 cups of whole wheat flour
  • A generous sprinkle of chocolate chips or raisins

Preheat your oven to 175° C.

In a bowl, mix the egg, oil, brown sugar, baking soda, baking powder, walnuts, and oats. Then, gradually add the flour until the mixture is thick enough to be rolled into balls. Stir in the chocolate chips or raisins.

If you’re making cookies, roll them into about 12 balls and bake for about 10 minutes. If you are making a blondie (also known as a lazy-person’s cookie), throw it all into a small pan and bake for about 20-30 minutes.

Enjoy!
