We have two favorite flourless dessert recipes that we make for gluten-free guests, on Pesach and year-round whenever we feel like it – just because they are quick, easy, and delicious. We love them because they don’t require xanthan gum or any fancy flour blends and instead use common ingredients we tend to already have at home. They are also both parve, meaning we can eat them literally any time.


You’ll need:

1 egg

1 cup sugar (white, brown, or a combination)

1 cup nut butter (peanut, hazelnut, cashew, or almond)

1 packet vanilla sugar

optional – chocolate chips, raisins, chopped nuts, kosher salt, or anything else you’d like to add.

Mix all of the ingredients together.

We are chocoholics, so we put chocolate chips in ours (and in most desserts). Feel free to add, leave out, or add something else.

Using wet hands so the dough doesn’t stick, roll the mixture into little balls, lay them on baking sheets, and flatten them just a little bit.

Bake at 170° C (about 350° F) for ten minutes until they seem done around the edges. Let them cool down enough to hold together and not burn you, and enjoy!

These cookies tend to go quickly so make sure to get a taste before they disappear. And as an added bonus, they have more protein than other cookies. 💪
